Rose’s GF feelgoodSignature breakfast muffins (good anytime of day)
Gluten-free, dairy-free, cholesterol-free, refined sugar-free,Yummy and Freeze well, enjoy!
3 egg whites
1/2 cup of coconut, rice or almond milk – I use unsweetened coconut milk (Rice Milk or Almond Milk work well too)
1 cup buckwheat flakes
1 tsp pure vanilla
1 almost tablespoon of gluten-free baking powder
1 tablespoon of Matcha = optional
6 oz pure dark chocolate chips (I use enjoy life chocolate chips)
a lot of or as much as you would like, frozen mixed power berries
Mix together = egg, vanilla and milk. In a separate bowl mix all dry ingredients together and stir into the bowl with the liquid ingredients . Using a spoon, stir in chocolate chips, and then frozen berries.
Put baking cups in muffin tray, then with a spoon, drop and fill in a the baking cup. Over fill the cup a bit. This recipe makes approx 5 muffins.
Bake at 350 for approx 38 minutes, until top is slightly brown. Freeze ’em then take one out in the morning, warm up in microwave for 30 seconds or leave out the night before, in the fridge to defrost and enjoy!
