Rose’s GF feelgoodSignature Chocolate Chip Cookies

I love these, right out of the freezer!

I tweaked my original recipe to use Robinhood GF flour and right now these cookies are Jeff’s favourite and he is our family cookie monster! If I were making these cookies just for moi, I would use brown rice, it makes them just that much healthier. However, these cookies are Jeff’s daily treat and he likes the white rice texture, and they are still super healthy. You and your peeps will love them! Enjoy!

(2/3) cup margarine (earth balance brand) = slightly melted

Sugar ½ cup organic sugar or coconut sugar

1 egg

1 tsp pure vanilla

1/2 Robin Hood GF flour

1/2 brown rice flour

6 oz pure dark chocolate chips (I use enjoy life chocolate chips)

Hand mix with a fork = margarine, sugar, egg and vanilla together. Add dry ingredients together and stir into batter. Stir in chocolate chips. Drop from a teaspoon onto a baking sheet with baking paper on it approx 2” apart. Bake at 350 for approx 10 minutes. These freeze well.
